Malt, up to this tlmo, oven in tho
Pabst brewery, was gotten from barley
grain by tho. best methods known. At
immonsocost involving tho outlay of
vast sums of money, tho Pabst Draw
ing company has perfected a now malt
ing process that Is so far superior to
tho old method as to bo beyond com
parison with it. Always before, tho
mutator spread tho ntcoped barley on
tho malt-houso floor, and was depend
ent upon tho wcathor for results. Malt
in the now Pabst malt-houso is
mado in weather that is made
in tho malt-houso tho only lire
proof, air-proof, germ-proof malt
houso in tho world. Tho walls nro
several feet in thickness; light enters
only through triple windows, closed
and sealed.
Malt is mado from barley, stop by
step.
HOW MALT 18 MATJK.
First Pabst obtains tho best barley
mouoy can buy. Then it is cleaned,
graded and stored, and at regular In
tervals cooled and freshened by the
"air-bath" blower.
Second To become malt, tho grain
must sprout or gormitmto in a moist
condition. Right here Is found tho
revolution in perfect malting. After
steeping an average of fifty-four hours
in pure water, tho grain is conveyed to
immenso germinating compartments.
Tho sprouting barley in these is
stirred and turned by automatic stir
ring and cranes, not by shovel as in
tho old way. Each and every iudlvid-
ual grain sprouts in tho samo tempera
ture, at tho samo tlmo and exactly to
tho samo extent.
Third After tho sprouting- or ger
minating, the compartments are emp
tied, and tho grain is carried away to
the kilns.
Pabst kilns are the only kilns ever
constructed that kiln rightly and prop
erly. Eight Immense floors In two
tiers lie ono above the other over great
furnaces beneath. All these floors are
metal, punctured by small holes to
admit the heat from below.
Tho wet Bproutlng malt goes to the
top floor first, where it begins to wither;
then the floor isopenod and tho malt
drops to the floor below, nearer and
nearer tho Jhcat, withering more and
more, drying as it goes. Finally upon
the lower floor the sprouts begin to
fall from tho grain, loafing tho malted
barley-grain dry.
Then comes the fanning, which blows
away and entirely removes every parti
cle except the perfect malted' barley
grain Itself.

Malt under tho new Pabst process
germinates in atmosphere that is tem
pered to tho fraction of a degree.
Eight days that work continues.
Pure filtered air of exact temperature
is drawn by suction at regular intervals
through tho grain, 'the malt being
ulwuys in a perfectly fresh, clean
atmosphere.
There Is never any change In tho
malting climate of tho Pabst malt
house. Change is often fatal. Pabst new
malt-houso Is the only one where
change is impossible.
Pabst malt is good malt; best malt
over produced.
Malt made that way, and It Is made

that's perfect malt, that means perfect
beer.

beer Is familiar to those who have
visited any good brewery. The brow-
house of tho Pabst brewery is the best

After the infusion of the hops, tho
cooking, cooling, the fermenting and
the storing, the barreling and the
finished product reaches the consum
ing public at last the best beer over
made, because it's made by the best
method from the best malt.
If tho malt isn't right, the beer si
bad; If tho malt is good, tho beer is
good; 11 the malt is perfect, the bear is
perfect.
